Red Lentil Blintzes
These are the easiest, cutest blintzes to make. Add any kind of veg and sauce that you would like to it and you will have a high protein dish!

Ingredients

- 1 cup of red lentils, soaked if time permits
- ½ cup of water
- 2 cloves of garlic
- ¾ TSP of baking powder
- salt & pepper to taste
- olive oil
Instructions
- if there is time, rinse and soak red lentils for 30 minutes
- in a blender blend all ingredients until smooth
- heat a large non-stick pan or skillet with a small drizzle of olive oil
- place one tablespoon of mixture and cook for a couple of minutes or until the blintz doesn’t stick
- turn and cook for another 1-2 minutes
- serve with your favourite veg and sauce
