Vegan Gluten-free and Raw Oat Pastry

I usually make this in my dehydrator, but if you don’t have one, it is easily done in the oven.

Ingredients

Scale
  • ½ cup of cashews, soaked for 1 hour
  • 100g of water
  • ¼ cup of maple syrup
  • 1/8 cup of sesame oil
  • 2 TSP of onion powder
  • 1 TSP of garlic powder
  • 3 TBSP of nutritional yeast
  • ½ TSP salt

 

  • ¼ cup of psyllium husk
  • 1 TBSP of chopped fresh herbs, oregano, rosemary, sage

 

  • 1/3 cup of oat flour + more for rolling
  • ½ cup of almond flour
  • 1 ½ TBSP coconut flour

Instructions

  • if using the oven, pre heat oven to 350 degrees (see notes for using dehydrator)
  • line a baking sheet with parchment paper or Silpat
  • in a bowl mix the last set of dry ingredients and set aside
  • in a blender, blend the first set of ingredients until smooth
  • then add second set of ingredients and blend to incorporate for a few seconds
  • add to dry ingredients and mix until a ball forms, if mixture is too wet add more oat flour, 1-2 TSP at a time
  • with a floured rolling pin, roll the dough to 1/8 inch thick
  • with a cookie cutter cut shapes roughly 2 inches large (see notes)
  • or with a knife cut in 2-inch squares
  • place on lined baking sheet
  • bake until golden brown or dried (15-20 minutes)
  • set aside to cool
  • fill with your favourite filling

Notes

  • if using a dehydrator, dehydrate at 115F for about four hours, then flip disks (or take out of the mold) and place on the mesh sheet. dehydrate for another 6-8 hours
  • if you plan to make tarts, like in my photo, after you roll out the pastry, place it in your tart pan and press down, cut off excess dough and continue with the recipe or dehydrate as described above
  • This pastry can be quite sticky.  Don’t be shy to add oat flour to help out with rolling.
  • To make your own oat flour, place oats in a blender or food processor and blend until fine.
