Red Lentil Blintzes

These are the easiest, cutest blintzes to make. Add any kind of veg and sauce that you would like to it and you will have a high protein dish!

Ingredients

Scale
  • 1 cup of red lentils, soaked if time permits
  • ½ cup of water
  • 2 cloves of garlic
  • ¾ TSP of baking powder
  • salt & pepper to taste
  • olive oil

Instructions

  1. if there is time, rinse and soak red lentils for 30 minutes
  2. in a blender blend all ingredients until smooth
  3. heat a large non-stick pan or skillet with a small drizzle of olive oil
  4. place one tablespoon of mixture and cook for a couple of minutes or until the blintz doesn’t stick
  5. turn and cook for another 1-2 minutes
  6. serve with your favourite veg and sauce
