- thinly sliced green and red cabbage
- 2–3 medium shredded carrots
- 2 TBSP vegan mayo
- 1–2 TSP mustard
- Juice of half a lemon OR
- 1–2 TBSP apple cider vinegar
- Salt & pepper to taste
Instructions
- in a bowl, mix all veg
- add dressing ingredients and mix
- set aside
Notes
This salad tastes even better the next day.
