Green Pea & Potato Soup

Ingredients

Soup

  • 23 medium diced potatoes
  • 1 small diced onion
  • 2 cloves of garlic, sliced
  • 1 litre of vegetable broth
  • 2 cups of frozen or fresh green peas
  • salt & pepper to taste
  • olive oil 
  • black sesame seeds

Optional: Black Red pepper drizzle

  • ½ cup of vegan sour cream
  • 1 roasted red pepper from jar
  • Up to ¼ cup of red pepper juice
  • 1 TBSP charcoal powder
  • salt & pepper to taste

Instructions

Soup

  1. in a large pot, drizzle 1 TSP of olive oil and sauté onion and garlic until soft
  2. add potatoes and sauté for 5-10 minutes
  3. add vegetable broth
  4. cook until potatoes are soft
  5. add green peas and cook until peas are warm
  6. transfer soup to a blender and blend until smooth
  7. set aside

Black Red pepper drizzle

  1. in a blender or food processor blend sour cream, red pepper, charcoal powder and 1/8 cup of red pepper juice
  2. if consistency is not pourable, add more red pepper juice
  3. season with salt and pepper as desired
  4. set aside

Assembly

  1. place 1-2 ladles of soup in a bowl
  2. sprinkle with black sesame seeds
  3. optional: drizzle black red pepper sour cream on top
  4. serve

 

Notes

  • My soup has a drizzle of vegan sour cream and black sesame seeds.
  • Activated charcoal powder works in other soups too. Do not exceed 1 TBSP per day per person.
  • Replace green peas with your favourite veggie.
