Ingredients

Soup
- 2–3 medium diced potatoes
- 1 small diced onion
- 2 cloves of garlic, sliced
- 1 litre of vegetable broth
- 2 cups of frozen or fresh green peas
- salt & pepper to taste
- olive oil
- black sesame seeds
Optional: Black Red pepper drizzle
- ½ cup of vegan sour cream
- 1 roasted red pepper from jar
- Up to ¼ cup of red pepper juice
- 1 TBSP charcoal powder
- salt & pepper to taste
Instructions
Soup
- in a large pot, drizzle 1 TSP of olive oil and sauté onion and garlic until soft
- add potatoes and sauté for 5-10 minutes
- add vegetable broth
- cook until potatoes are soft
- add green peas and cook until peas are warm
- transfer soup to a blender and blend until smooth
- set aside
Black Red pepper drizzle
- in a blender or food processor blend sour cream, red pepper, charcoal powder and 1/8 cup of red pepper juice
- if consistency is not pourable, add more red pepper juice
- season with salt and pepper as desired
- set aside
Assembly
- place 1-2 ladles of soup in a bowl
- sprinkle with black sesame seeds
- optional: drizzle black red pepper sour cream on top
- serve
Notes
- My soup has a drizzle of vegan sour cream and black sesame seeds.
- Activated charcoal powder works in other soups too. Do not exceed 1 TBSP per day per person.
- Replace green peas with your favourite veggie.
