Chocolate Chip Almond Cookies

Ingredients

Scale
  • 1½ cups of almond meal/flour
  • ¼ cup of maple syrup
  • ¼ cup of coconut oil
  • ¼ cup of sunflower seeds
  • ¼ cup of chocolate chips
  • ½ Tsp of vanilla extract
  • Pinch of kosher/sea salt (optional)

Instructions

  1. Pre heat oven to 350 degrees
  2. Line a baking sheet with parchment paper or Silpat
  3. In a large bowl, mix all ingredients until a dough forms
  4. Scoop desired amount of dough, roll into a ball and flatten if wanted
  5. Place on baking sheet
  6. Bake for about 15 minutes or until golden brown

Notes

  • These cookies don’t spread, so shape them as you wish before baking.
  • Instead of sunflower seeds use other nuts or double the chocolate chips.
